Coffee is a popular drink in the world thanks to its characteristic and delicious bitter taste and a particular energizing effect. It exists practically all over the planet, that's why each country has made it its own, with various traditional preparations and recipes.

Such is the case in Mexico, where café de olla, sweetened with piloncillo and flavored with cinnamon, is one of the favorite choices of many to accompany dessert or sweet bread.

Cafe de olla is said to have arisen at the time of the Mexican Revolution. That’s right! A recipe prepared by the Adelitas who prepared the coffee with cinnamon, piloncillo and some other spices. Coffee arrived in Mexico from the 18th century, according to some historians, and it is native to Ethiopia. Since then it has been a widely valued drink in the country.

It is called café de olla because traditionally it was made in a clay pot and when ready it was served in a jar of the same material.
